    Ingredients  1/2 cup white whole wheat flour – or swap all-purpose flour 1/4 cup all-purpose flour ¼ cup rolled oats 1/2 teaspoon baking powder 1/4 teaspoon baking soda 1/4 teaspoon kosher salt 1 teaspoon ground cinnamon 1/4 teaspoon ground ginger ¼ teaspoon ground nutmeg 6 tablespoons unsalted butter – at room temperature 1/4 cup brown sugar – light or dark 1/4 cup granulated sugar 1 cup pumpkin puree – not pumpkin pie filling 1 large egg 1 teaspoon pure vanilla extract 1 cup dark chocolate chips ½ cup chopped walnuts – or swap pecans, chopped dried apricots, dried cranberries, or additional chocolate chips Instructions Position rack in the center of your oven.     INGREDIENTS Cinnamon Apples 1/2 cup chopped apple (about 1/2 a large apple) 1 teaspoon maple syrup pinch of cinnamon Overnight Oats 1/2 cup old fashioned oats 1/2 –3/4 cup unsweetened vanilla dairy-free milk (almond, cashew, coconut, etc.) 1/4 cup plain Greek yogurt or coconut yogurt 2 teaspoons maple syrup, honey or your favorite sweetener 1/2 teaspoon vanilla 1/2 teaspoon cinnamon (or apple pie spice) toppings: cinnamon apples, nut butter, chopped nuts, chia or hemp seeds INSTRUCTIONS Prep cinnamon apples: add chopped apple pieces, maple syrup and cinnamon in a small microwave-safe bowl.     I don’t know about you, but I love making energy bites! They are simple and easy to make! Plus, when I am short on time and hungry, they make grabbing something that isn’t junk easy! All you need for this recipe is five ingredients and fifteen minutes!! Ingredients ¾ cup dry rolled oats ¾ cup all-natural smooth almond butter ½ cup pure pumpkin puree ¼ cup honey 3 scoops Pumpkin protein powder. (I used Plant-Based Vegan Shakeology.     As of late, I have had a huge blueberry muffin craving. So! A few weeks ago when I got my hands on fresh blueberries, I knew what I was going to do with them. This recipe is sooo good and simple!
